Potato scones

4 tablespoons self raising flour

1 teaspoon baking powder

1/2 teaspoon salt

1 tablespoon margarine or cooking fat

4 tablespoons mashed potato – dry mash if possible.

Mix together flour, salt, and baking powder and rub in the margarine.

Add the mash until light and creamy with the margarine.

Make a dough, add a little milk if needed.

Press out into a sausage shape and slice into 6.

Brush top with milk and bake in a moderate oven for 20-30 minutes until golden.xx

Homity Pie Potato dish

Homity pie was made by the Land Girls in WW2. I love stories about the Land Girls. They were fabulous.

4 large potatoes

2 large leeks

1 eating apple, cored and chopped into small cubes

2 garlic cloves, chopped finely

1 egg

butter or margarine

4-6 oz cheese

fresh or dried thyme (to taste)

salt and pepper (to taste)

shortcrust pastry

Make shortcrust pastry using plain flour and 3 oz of fat (not on ingredients list). Rub the flour and fat into together and bind with some cold water. I usually put it in the fridge for 30 minutes to make it more manageable.

After 30 minutes, roll the dough out and line a pie dish (approx 10″ x 6″) and place in the oven for 10 minutes to part bake.

Leave skins on the potatoes and chop into chunky cubes, place in water and simmer until tender.

Chop up the leeks and garlic and gently saute in pan until cooked (use some of the butter or margarine for this but watch it as it can burn quickly) Add most of the herbs and chopped apple, toss together.

Drain the potatoes then add to the pan with the leeks, 1 whisked egg and some more butter or marg and 2 oz of grated cheese and gently mix. Add salt and pepper.

Put the mixture into the pastry then top with the rest of the cheese and sprinkle thyme and pepper on the top.

Cook in the oven at 200 c until the top is golden.x
